Mithai made the slow way

Every batch starts with fresh milk in the morning. Khoya is reduced over a low flame, besan is roasted in desi ghee until it smells nutty, and laddoo and katli are finished by hand. Small batches mean what you buy was made today, not last week.

Which sweet for which occasion?

For Diwali and corporate gifts, choose dry sweets such as kaju katli, besan laddoo and soan papdi: they keep for one to four weeks. For guests at home and birthdays, milk sweets like rasgulla, rasmalai and kalakand are at their best within two days.
